First time making five gallons of Welch's wine today.
Recipe called for adding an acid blend, but the starting ph was 3.0 due to the citric and ascorbic acid in the Welch's so I didn't add anymore.

It's happily bubbling away right now.

It's funny how people think the same. I've got a six gallon carboy of welch's sitting right now in my office getting some age on it and clearing just a tad more before I bottle it.
I joke and call it Mad Dog, and sometimes Thunderbird, but should think up another name not to infringe on a copyrighted trade mark!

Sorry about the tardiness in gettink to you, LW

I haven't made mead for nigh on forty years and I forget exactly how much we got from five gallons. Six twenty six flozz bottles to the gallon seems familiar. Hmmm Thirty for five gallons sounds VERY familiar :) so I would expect the same. I"ll let you know how it progresses as I started a batch today. Yeast in in the morning.

Stripped a rum wash today and put down another wash with the backslop.

Good flavour this one. Managed to get it at a slow steady drip till the tails kicked in.

Don't mind tellin' ya I was more nervous than a Werribee Duck after the flour paste seal blew out last week and sprayed me (and half the kitchen) with hot wash.

Running some molasses wash todaying seeing as it's only 35c in the shed. Just gotta love the smell of molasses white dog.

Honey wash is fermenting like a cut cat. Nothing like a little bit of warmth to move things along.

What a coincidence there Blanik, I'm stripping a molasses wash at the moment. Difference is I had to put my propane tank in a bucket of warm water to keep it from seizing. Started my gallon of starter for the next wash in the morning. Getting a good amount of low wines saved up. Cheers, bd.

Stripping my last 15 gallons of corn/sugar mash. Again, it's getting cold here and the propane bottle is developing an attitude. After I'm done this I'll have a total of 40 liters of similar low wines and about three gallons of cleared wash that I held back. I've just been making and stripping because of time constraints but pretty soon I'll have the time to do a nice long spirit run. Can't wait. Cheers, bd.
